Developed from Cabernet Franc, the process is the same as for white Crémant. It is a veritable firework for your olfactory and gustatory senses. The colour is a delicate raspberry with a hint of Loire salmon and the purity of crystal. The bubbles make up a delicate creamy surround. The nose is lingering, whilst the red and black fruit (raspberry, strawberry and blackcurrant) result in a pleasant fruity freshness. The taste is silky and creamy, whilst the fine mischievous mousse excites the palate and satisfies the taster. The keen flavour has the subtlety of roses, rosemary and cherries: whereas resin reinforces this interesting sharpness, which is softened by vanilla and liquorice. This wine is ideal for your aperitifs and desserts of red fruit.
Domaine de Nerleux, St Cyr en Bourg, Saumur
For 5 centuries, the Domaine of Nerleux, Black Wolfs in old French, has lived in an old XVIIth mansion with walls full of history where winegrowers have followed winegrowers for eight generations.
Today the estate consists of 45 hectares of Cabernet Franc, 38 hectares of Chenin Blanc and 1 hectare of Chardonnay. The average age of the vines is 25 years, whilst the oldest vines date back to 1933. The vineyards are put under grass and grown according to a reasonable agriculture to preserve the bacterial balance of the soil and the invaluable wildlife. The personalized vinifications for each type of wine are made in thermo regulated wine storehouse. The limestone, chalky rock of the Turonien, is the nutritious stone of the Domaine of Nerleux wines. All winter long it absorbs the excess of water to give it back sparingly during the summer, it's why wines are supple, ample and generous.
